The mature (Shu) ferments for approximately 40-50 days in a controlled environment with the appropriate humidity and temperature.

Semi-fermented Pu-erh tea is a mix of raw and cooked leaves that have been pressed and steamed. In this form, the tea is a beautiful combination of light and dark leaves.
