Rose hips are often praised for their unusually high vitamin C content – one of the best plant sources of this vitamin, known as a natural immune booster. Since it is water-soluble, it is almost completely lost during drying (evaporating along with the water). However, the fiber (in the form of pectin) and mineral content (calcium, iron, potassium) are concentrated in the dried fruit.
