Lavender honey is characterized by a great aroma and a sweet-sour taste. The harvest is in July, which is also when the lavender fields bloom. Lavender is believed to have a relaxing and sedative effect (antidepressant), which is why lavender honey is recommended for consumption in the evening before bed to calm the body and promote better sleep.
