The excellent climatic conditions with abundant rainfall and abundant sunshine create the ideal conditions for this wonderful tea. What is fermentation: Fermentation is the term used in the tea industry and is related to the oxidation process. For tea types that require oxidation, the leaves are left in temperature and humidity controlled rooms where they gradually darken. During oxidation, the processes of decomposition of chlorophyll, release of tannins and their transformation take place. The duration of processing and the conditions under which it takes place depend on the type of tea produced. The degree of oxidation is decisive for the taste, color and tonic properties of the tea. The taste of incompletely fermented tea is more grassy, in contrast to the rich tart taste that is obtained after full fermentation.
